Easy Meals: One Pot Pasta for the working parent

Being a working parent can be tough, especially

when it comes to mealtime. Here are some easy meals that you can make for your family: The One-Pot Pasta recipe is a quick and easy recipe that only requires one pot1. The recipe uses a revolutionary technique where all the ingredients cook together in the same pan (a straight-sided skillet). You don’t even need to boil water first. The ingredients include pasta, tomatoes, onions, garlic, fresh basil, and extra-virgin olive oil. As the pasta cooks, the water reduces, and the starchiness from the pasta transforms the remaining water into a creamy sauce. You can use cherry or grape tomatoes for this recipe. Don’t skip the Parmesan and more fresh basil to finish the dish! Here’s a recipe for One-Pot Pasta by Martha Stewart1: Ingredients:

  • 12 ounces linguine

  • 12 ounces cherry or grape tomatoes, halved or quartered if large

  • 1 onion, thinly sliced (about 2 cups)

  • 4 cloves garlic, thinly sliced

  • 1/2 teaspoon red-pepper flakes

  • 2 sprigs basil, plus torn leaves for garnish

  • 2 tablespoons extra-virgin olive oil, plus more for serving

  • Coarse salt and freshly ground pepper

  • 4 1/2 cups water

  • Freshly grated Parmesan cheese, for serving

Directions:

  1. Combine pasta, tomatoes, onion, garlic, red-pepper flakes, basil, oil, 2 teaspoons salt, 1/4 teaspoon pepper, and water in a large straight-sided skillet.

  2. Bring to a boil over high heat. Boil mixture, stirring and turning pasta frequently with tongs, until pasta is al dente and water has nearly evaporated.

  3. Season to taste with salt and pepper; divide among four bowls. Serve with oil and Parmesan.
